As the Fall quickly turns to bitter Old Man Winter here in MI, I begin to want to hibernate: stay in, cuddle up with the kitties, and eat lasagna! I have to balance that desire with staying healthy and motivated because I know that if I stay active, keep up with my yoga practice and meditation, and eat well, I will feel better and ultimately will be more healthy.
Here’s one of my favorite, easy, healthy comfort foods for this time of year:
